- 1/4 cup sugar
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon ground ginger
- 1 teaspoon curry powder
- 1/4 to 1/2 teaspoon cayenne pepper
- 3 cups pecan halves
- 1/4 teaspoon salt
- In a large microwave-safe bowl, combine the first six ingredients; microwave, uncovered, on high for 15 seconds. Add pecans; toss to coat.
- Microwave, uncovered, 3-4 minutes longer or until lightly browned, stirring after each minute. Spread onto waxed paper to cool. Sprinkle with salt. Store in an airtight container. Yield: about 3 cups.
