Ingredients

  • 1/4 cup sugar
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 3 cups pecan halves
  • 1/4 teaspoon salt

1/3 cup equals 299 calories, 27 g fat (2 g saturated fat), 0 cholesterol, 66 mg sodium, 15 g carbohydrate, 4 g fiber, 3 g protein.

Directions

  1. In a large microwave-safe bowl, combine the first six ingredients; microwave, uncovered, on high for 15 seconds. Add pecans; toss to coat.
  2. Microwave, uncovered, 3-4 minutes longer or until lightly browned, stirring after each minute. Spread onto waxed paper to cool. Sprinkle with salt. Store in an airtight container. Yield: about 3 cups.
