My five brothers, two sisters and I grew up on a farm and built up hearty appetites doing various chores. It seemed no matter what I helped Mom cook was gobbled up. That encouraged me to spend more time in the kitchen!

  • 2 cups biscuit/baking mix
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1/2 cup applesauce
  • 1/4 cup milk
  • 2 tablespoons vegetable oil
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter, melted


  • In a bowl, combine the biscuit mix, sugar and cinnamon. In another
  • bowl, beat the egg, applesauce, milk and oil. Stir into dry
  • ingredients just until moistened.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at
  • 400° for 10-12 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to a wire rack.
  • In a small bowl, combine sugar and cinnamon. Dip muffin tops in
  • melted butter, then in cinnamon-sugar. Yield: 1 dozen.
