Sugar-Topped Applesauce Muffins Recipe

My five brothers, two sisters and I grew up on a farm and built up hearty appetites doing various chores. It seemed no matter what I helped Mom cook was gobbled up. That encouraged me to spend more time in the kitchen!

Ingredients

  • 2 cups biscuit/baking mix
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1/2 cup applesauce
  • 1/4 cup milk
  • 2 tablespoons vegetable oil
  • TOPPING:
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter, melted

1 serving (1 each) equals 165 calories, 8 g fat (3 g saturated fat), 24 mg cholesterol, 279 mg sodium, 22 g carbohydrate, 1 g fiber, 2 g protein.

Directions

  1. In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk and oil. Stir into dry ingredients just until moistened.
  2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
  3. In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in cinnamon-sugar. Yield: 1 dozen.

Love these ! My daughter calls them heaven food. I did add some vanilla. Also, tried this with chunky brown sugar applesauce and they turned out super ! I make honey butter to go with them.
