Spicy Refried Beans

Ingredients

1 small onion, chopped

1 jalapeno pepper, seeded and chopped

1 garlic clove, minced

2 teaspoons vegetable oil

1 can (16 ounces) refried beans

2 tablespoons water

1 teaspoon hot pepper sauce

1/4 teaspoon ground cumin

1/4 teaspoon chili powder

1/8 teaspoon cayenne pepper

1/2 cup shredded Monterey Jack cheese
Directions

In a large skillet, saute the onion, jalapeno and garlic in oil for 2-3 minutes or until tender. Stir in the beans, water, hot pepper sauce, cumin, chili powder and cayenne. Cook and stir over medium-low heat until heated through. Transfer to a serving bowl; sprinkle with cheese.
