  • 2 small eggplants, cut into 1/2-inch slices
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 3 teaspoons Cajun seasoning

  1. Brush eggplant slices with oil. Drizzle with lime juice; sprinkle with Cajun seasoning. Let stand 5 minutes.
  2. Grill eggplant, covered, over medium heat or broil 4 in. from heat until tender, 4-5 minutes per side. Yield: 8 servings.

"This is a great way to make eggplant. I salted the slices and let them sit for 20 minutes, then patted with a paper towel. They cook up quickly depending on how hot your grill is, so watch that they don't burn."

"I have never tried eggplant and this recipe was so good! Even my boyfriend who won't eat peas liked it! I did it on the george forman, but next time I might broil them so they are a little more crisp."
