Ingredients

  • 2 pounds Swiss chard, chopped
  • 2 teaspoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 1/8 teaspoon salt

2/3 cup equals 45 calories, 2 g fat (trace saturated fat), 0 cholesterol, 372 mg sodium, 6 g carbohydrate, 2 g fiber, 3 g protein. Diabetic Exchange: 1 vegetable.

Directions

  1. In a Dutch oven, saute chard in oil for 3-5 minutes or just until wilted.
  2. Stir in the garlic, lemon juice, pepper flakes and salt; cover and cook 2-3 minutes longer or until tender. Yield: 6 servings.

I added bacon and diced onion then replaced the lemon juice with apple cider vinegar. Very good!!
