Spicy Chili Mac Recipe
- 2 cups uncooked whole wheat elbow macaroni
- 1 pound lean ground turkey
- 1 small onion, chopped
- 2 to 3 jalapeno peppers, seeded and chopped
- 2 teaspoons olive oil
- 2 garlic cloves, minced
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 to 2 tablespoons hot pepper sauce
- 2 to 3 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon pepper
- 3/4 cup shredded reduced-fat cheddar cheese
- 1. Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook the turkey, onion and jalapenos in oil over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
- 2. Add the beans, tomatoes, tomato sauce, pepper sauce and seasonings. Drain macaroni; stir into turkey mixture. Cook over medium-low heat for 5 minutes or until heated through.
- 3. Sprinkle with cheese. Remove from the heat; cover and let stand until cheese is melted. Yield: 6 servings.

Can't always handle spicy foods so I only used one jalapeno pepper and did the minimum suggestion on the other spices. Glad I did. Even my husband, who can always handle spicy things, was glad I didn't use more spices. I believe I'll use rice next time, instead of the pasta. I made a lot of changes and this recipe is very forgiving. i used hamburger meat, forgot the tomatoes, used the green onions instead of white or yellow, and left out the hiot pepper sauce and allowed the hubby to add according to his own taste b/c when making something spicey the next day when you heat up left overs it is still spice but 10 times more so. I plan on trying this recipe again and make even more changes by putting a can of corn in it, just to add another texture. i may try using rice instead of pasta next time also just to see how it will be. When i reheated the left overs my pasta was a little mushy/nasty (cheap cheap pasta makes left overs cry) SO i also think that mebbe a little less pasta and adding to bowls before serving. will also try adding some cilantro next time. you can really try to add or leave out or substitute anything i think in this recipe."
