Spiced Rhubarb Bread Recipe

We have so much rhubarb in the Northwest, I was happy to get another idea for its uses. I especially like this recipe because it freezes well.

Ingredients

  • 1-1/2 cups packed brown sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon McCormick® Pure Vanilla Extract
  • 1 teaspoon baking soda
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1-1/2 cups diced fresh or frozen rhubarb
  • 1/2 cups chopped nuts, optional
  • TOPPING:
  • 1/2 cup sugar
  • 1 tablespoon butter, melted
  • 1 teaspoon ground cinnamon

1 serving (1 slice) equals 137 calories, 5 g fat (1 g saturated fat), 8 mg cholesterol, 131 mg sodium, 21 g carbohydrate, trace fiber, 2 g protein.

Directions

  1. In a bowl, beat brown sugar, oil and egg. Add buttermilk, vanilla and baking soda; mix well. Combine flour, salt and cinnamon; stir into milk mixture. Fold in rhubarb and nuts if desired. Pour into two greased 8-in. x 4-in. loaf pans. Combine topping ingredients' sprinkle over loaves. Bake at 350° for 1 hour or until bread tests done. Yield: 2 loaves.

"I inadvertently left the topping off which I discovered as I went to write a review and realized I had left the melted butter combined with the sugar and cinnamon in the microwave. Oops! The bread was delicious without the topping and my husband said he didn't even miss it but since I did leave it off, I am giving this only four stars and will make another batch with the topping. I travel full-time in an RV so one never knows how things will come out or what ingredient I may forget!"

"Delicious and different from the usual rhubarb pie. The only slight drawback is that they don't look that impressive because of the melted butter and brown sugar topping- fine for family, but not giving as gifts. I may try a traditional crumble topping next time."
