Special Cranberry Nut Muffins Recipe

This special holiday bread recipe combines two of my favorites— tangy dried cranberries and spicy cardamom.
TOTAL TIME: Prep: 15 min. Bake: 20 min. + cooling YIELD:14 servings

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup butter, melted
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • CARDAMOM BUTTER:
  • 1/2 cup butter, softened
  • 1/4 cup confectioners' sugar
  • 1 teaspoon ground cardamom

Directions

  • 1. In a bowl, combine the dry ingredients. Stir in the buttermilk, egg, butter, cranberries and nuts just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
  • 2. Bake at 400° for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to wire racks. Combine cardamom butter ingredients; serve with muffins. Yield: 14 muffins (about 3/4 cup butter).

"My husband and I really liked these muffins..I added a struesle topping and used pecans instead of walnuts. I will certainly make them agan.I'm going to try this reciped with dried sour cherries next."
