Ingredients

  • 1/4 cup butter, cubed
  • 2 cups uncooked instant rice
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 cup boiling water
  • 2 beef bouillon cubes
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Nutritional Facts

3/4 cup: 217 calories, 8g fat (5g saturated fat), 20mg cholesterol, 886mg sodium, 33g carbohydrate (4g sugars, 2g fiber), 4g protein .

Directions

  1. In a saucepan over medium heat, melt butter. Add rice and stir until browned. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer 10-15 minutes or until the liquid is absorbed and rice is tender. Remove bay leaf before serving. Yield: 4-6 servings.

"Delish! I sautéed chopped onion and a chopped sweet pepper along with the rice. Also used a can of diced tomatoes with jalapeño to add a bit of zip. Finally, I added sliced, fully cooked chorizo sausage at the very end to make this a complete meal. dinner was a BIG hit!"
