Southern Tea Cakes Recipe
- 1 cup shortening
- 1-3/4 cups sugar
- 2 large eggs
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
- 3 cups self-rising flour
- 1. In a bowl, cream together shortening and sugar. Beat in eggs. Add milk and vanilla; beat well. Stir in flour; mix well.
- 2. Drop by tablespoonfuls 2-1/2 in. apart onto greased baking sheets. Bake at 350° for 15-20 minutes. Yield: about 3 dozen.

"my hubby said "those are good cookies", which is all the kudos I need. I did add a couple tsp lemon oil. Be sure to bake till edges begin to turn golden, or you will have a crumbly soft cookie. Cool on sheets 1-2 min before removing to cool. This is a very easy recipe, and I had some self rising flour to use up. I think various extracts could be nice."
