Southern Pimiento Cheese Spread Recipe
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- 1 jar (4 ounces) diced pimientos, drained and finely chopped
- 1/3 cup mayonnaise
- Assorted crackers
- 1. Combine cheese, pimientos and mayonnaise. Refrigerate for at least 1 hour. Serve with crackers. Yield: 1-1/4 cups.

"I made this for our annual family Easter party with the following changes. I added 2 ounces of cream cheese, I used sharp Cheddar cheese and about 3/4 cup of cheddar Jack cheese, I put in 2 ounces of pimiento instead of 4 and added seasoned salt to taste. I served it with lavish bread style crackers.It was so good people asked for the recipe and I will be making this again."
