Smashed Potatoes Recipe
- 7 to 8 medium red potatoes (about 2 pounds), quartered
- 1/4 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Pinch ground nutmeg
- 1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
- 2. In a large bowl, mash potatoes with the sour cream, milk, butter, salt, pepper and nutmeg. Yield: 4 servings.
1 cup: 233 calories, 9g fat (6g saturated fat), 27mg cholesterol, 232mg sodium, 33g carbohydrate (3g sugars, 3g fiber), 5g protein.
