Simple Pork Chop Dinner Recipe

Canned soup creates a comforting gravy for tender pork and potatoes in this simple meal-in-one from Mike Avery of Battle Creek, Michigan. Feel free to vary the amount of onion soup mix in the recipe to suit your family's tastes.
TOTAL TIME: Prep: 10 min. Cook: 6 hours YIELD:4 servings

Ingredients

  • 6 to 8 medium carrots (1 pound), coarsely chopped
  • 3 to 4 medium potatoes, cubed
  • 4 boneless pork loin chops (3/4 inch thick)
  • 1 large onion, sliced
  • 1 envelope onion soup mix
  • 2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted

Directions

  • 1. Place carrots and potatoes in a 3-qt. slow cooker. Top with pork chops, onion, soup mix and soup. Cover and cook on low for 6-8 hours or until meat and vegetables are tender. Yield: 4 servings.

"Very good! I seasoned the pork with a spice blend, Pikes Peak ( any blend would do). I think it gave the pork a little more flavor. I also added a sliced small red pepper. I omitted the potatoes and served the pork dish with Spanish rice. Quick to pull together in the morning before running out the door."

"I browned chops first, changed the onion soup mix for leek soup mix,used salt free mushroom soup, and added some sliced fresh mushrooms. I left out the potatoes and used mashed ones for a side with the gravy. It was wonderful. I will be making this again."

"Easy! Delicious! Family really like this ... thinking I could omit the chunk potatoes, and use the gravy on mashed potatoes since have to make 2 entrees some nights due to picky eaters :( On the seasoning issue-- I used some No Salt seasoning and healthy Request Mushroom soup (due to sodium in onion soup mix). "This was pretty good. I found the pork a little bland. maybe i will try seasoning it and browning it separately before adding it next time. My family still enjoyed it though. It is super easy to make, so i will prolly make this again when i need something simple that can cook all day by itself."

"These chops were super easy and very delicious. I usually have all of this stuff in my fridge/freezer and pantry, so I can make them anytime. I used frozen chops and I pulled out the veggies before the chops were done, so they wouldn't be mushy. I hate mushy carrots! (:"
