Simple Lemon Fruit Dip Recipe

My husband's a construction worker and this is a great treat to put in his lunch with whatever fresh fruit he wants. It keeps all week in the fridge. Fun, tasty, lemony! —Megan Wilkinson, Morgan, Utah
TOTAL TIME: Prep/Total Time: 5 min. YIELD:13 servings

Ingredients

  • 1 cup cold milk
  • 1 package (3.4 ounces) instant lemon pudding mix
  • 1 cup (8 ounces) sour cream
  • Assorted fresh fruit

Directions

  • 1. In a small bowl, whisk milk and pudding mix for 2 minutes (mixture will be thick). Whisk in sour cream. Chill until serving. Serve with fruit. Yield: 1-2/3 cups.

2 tablespoon: 75 calories, 4g fat (3g saturated fat), 14mg cholesterol, 106mg sodium, 9g carbohydrate (7g sugars, 0 fiber), 1g protein. Diabetic Exchanges: 1/2 starch, 1/2 fat.

"Made this one for the first time last night. When I first made it I have to admit that it tasted..... A little funky. However, I let it sit over night in the fridge and found that in the morning it was fantastic. I saw that some did not care of the taste and I wonder if not letting the flavors kind of marinate together for a period of time was the difference."

"I joined this site with the express purpose to warn others NOT to make this recipe. Made it for a party and could not serve it...inedible with a very artificial taste from the instant pudding. I should've known better when I saw that as an ingredient. Used yogurt, honey, with touch of cinammon instead.

Do yourself a favor and don't waste time or ingredients on this one. Nasty stuff."

"I served this with fresh pineapple & strawberries & while it was okay, I envision this as a filling between layers of a lemon or yellow cake instead. Very tasty but didn't really lend much to the fruit I had."

"I'm getting VERY irritated by people posting comments that relate to their own preferences and dietary needs!!! "If you can't say anything good..." - especially if you haven't tried the recipe/or wouldn't because of your likes and dislikes, DON'T bother commenting at all!!! I loved how easy this was to make and although I'm a real fan of everything from scratch, will make sure I have the instant lemon pudding mix on hand for the times my schedule doesn't allow me the time to spend making a recipe with fresh lemons, etc. Both my husband and I love lemon in any course and this is great for the coming season when we can get Ontario grown fresh fruit. Will try a dash of cinnamon, ginger or nutmeg with some fruit to give this a twist. Thanks for the recipe - have starred it, archived it and printed it off."
