There are plenty of ways to prepare spuds, but seasoned red potatoes is one of our favorite recipes for flavorful, easy potatoes. Here’s how to make roasted red potatoes that will have everyone going back for seconds (and maybe thirds).

How to Prep the Potatoes

We don’t peel the potatoes in this recipe, so before you get started, you’ll need to wash the dirt off them. Just scrub them with a vegetable brush under cool water. Let them dry, and you’re ready to begin cooking. Our guide to how to wash potatoes has more details for you.

Ingredients for Seasoned Red Potatoes

  • Red potatoes: Of all of the types of potatoes, red potatoes will yield some of the crispiest skins and creamiest, dreamiest insides when roasted.
  • Olive oil and butter: This powerhouse combination of fats gives the potatoes a delicious flavor. It also helps the seasonings adhere and prevents the potatoes from sticking to the pan.
  • Seasonings: Garlic powder and salt are the main seasonings that give red potatoes their character, but dried basil and thyme add extra flair to take them over the top.

Directions

Step 1: Prep the potatoes

Preheat the oven to 375°F. Place potatoes inside an ungreased 15x10x1-inch baking pan. In a small bowl, stir together the olive oil, butter, salt, garlic powder, basil, thyme and pepper. Drizzle the mixture over the potatoes.

Step 2: Bake the potatoes

Bake the potatoes, uncovered, for 55 to 60 minutes or until tender, stirring every 15 minutes.

Seasoned Red Potatoes Variations

  • Swap out the seasonings: Oregano, chili powder, paprika (or smoked paprika), onion powder, dried sage, Italian seasoning, dried rosemary or parsley are all fair game for roasted red potatoes. Everything But The Leftovers seasoning from Trader Joe’s would be a good call, too. The whole spice cabinet is yours for exploring!
  • Add Parmesan cheese: Grated Parmesan would add some nutty flavor to the potatoes that everyone will love. Measure the amount of cheese you use on the potatoes with your heart, not a measuring cup.

How to Store Seasoned Red Potatoes

To store leftover potatoes, let them cool completely. Store in an airtight container in the fridge for three to four days. Reheat in a 350° oven or in the microwave until warmed through.

  • 12 to 14 small red potatoes, quartered
  • 1/4 cup butter, melted
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon pepper
