These simple but tasty potatoes are on the menu at my SideTrack Cafe in Metamora, Indiana. I've collected recipes for years, and this is a favorite.—Nancy Johnson, Connersville, Indiana

  • 12 to 14 small red potatoes
  • 1/4 cup olive oil
  • 1/4 cup butter, melted
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon pepper

Nutritional Facts

2 each: 216 calories, 17g fat (6g saturated fat), 20mg cholesterol, 476mg sodium, 15g carbohydrate (1g sugars, 2g fiber), 2g protein.


  1. Peel a strip from around each potato. Place potatoes in an ungreased 3-qt. baking dish. In a small bowl, combine the oil, butter and seasonings; drizzle over potatoes.
  2. Bake, uncovered, at 350°, for 50-55 minutes or until tender, stirring every 15 minutes. Yield: 6 servings.

"Wow! These were so good and so simple! I did as another suggested and quartered the potatoes - tender and crispy and seasoned perfectly! There was some of the seasoned butter left in the dish and my husband soaked it up with some rolls for an instant seasoned bread. We will make these often."

"These were delicious! I thought they might have been just a tad too salty for my taste but my husband loved them. Next time I was cut back the salt just a smidge and my husband can add salt afterwards."

"My family and I loved this! The only thing I did do differently is I boiled the potatoes for about 10 minutes before putting them in the oven, then baked them for about 35 minutes and put them under the broiler to finish them for 5 minutes. Sped up the cooking time a little and made them soft on the inside, and a little crisp on the out! Sooo delicious!"
