Ingredients

  • 3 pounds sweet potato, cooked, peeled and cubed
  • 1 cup chopped sweet red pepper
  • 1/2 cup chopped onion
  • 1-1/4 cups mayonnaise
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 to 1/4 teaspoon hot pepper sauce

1 serving (3/4 cup) equals 366 calories, 28 g fat (4 g saturated fat), 13 mg cholesterol, 494 mg sodium, 27 g carbohydrate, 4 g fiber, 2 g protein.

Directions

  1. In a large bowl, combine potatoes, red pepper and onion. In a small bowl, blend mayonnaise, salt, pepper and hot pepper sauce. Pour over potato mixture and toss to coat. Cover and refrigerate for at least 1 hour. Yield: 6-8 servings.
