Sauteed Spinach and Peppers Recipe
- 1 tablespoon olive oil
- 1 large sweet red pepper, coarsely chopped
- 1 small red onion, finely chopped
- 3 garlic cloves, minced
- 8 cups packed fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon sugar
- 1. In a large skillet, heat oil over medium-high heat. Add red pepper; cook and stir for 1 minute. Add onion and garlic; cook 1-1/2 minutes longer or until onion is tender. Add remaining ingredients; cook and stir for 1-2 minutes or until spinach is just wilted. Yield: 4 servings.
1/2 cup equals 65 calories, 4 g fat (1 g saturated fat), 0 cholesterol, 342 mg sodium, 7 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

"I used this as a base for marinated baked tofu, and it was a success. I used an Asian marinade of soy sauce, ginger, chopped green onion and garlic chili paste....and dusted my tofu squares with corn starch before baking. I also added sliced, fresh mushrooms. A very tasty, filling dinner."
