  • 1 pound bulk pork sausage
  • 1 medium onion, chopped
  • 2 medium carrots, grated
  • 1 medium green pepper, chopped
  • 3 cups diced cooked potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  1. In a large skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir for 20 minutes or until lightly browned and heated through. Yield: 6 servings.

"This recipe is excellent exactly as written - don't change/substitute anything when making it. Oh wait, with one small exception. I used canned, diced potatoes instead of fresh. It saved time and the flavor wasn't impacted. Thank you for sharing this quick and satisfying recipe, Virginia!."
