"We always have plenty of pork sausage around, so when I need a quick supper, I use this handy recipe," relates Virginia Krites of Cridersville, Ohio. "The colorful vegetables give this dish a perky look to match its flavor."

"This recipe is excellent exactly as written - don't change/substitute anything when making it. Oh wait, with one small exception. I used canned, diced potatoes instead of fresh. It saved time and the flavor wasn't impacted. Thank you for sharing this quick and satisfying recipe, Virginia!."

"Used Italian sausage & used spinach instead of green pepper. Also served with a fried egg on top! - a delicious, quick weeknight meal!"
