Saucy Pork Chops Recipe

I don't always have time to fix the home-cooked meals my family loves, so I've come to rely on my slow cooker a lot. I fix these tangy chops at least once a week—the meat's so tender you can cut it with a fork—and we all love it! —Jennifer Ruberg, Two Harbors, Minnesota
TOTAL TIME: Prep: 15 min. Cook: 4 hours YIELD:4 servings

Ingredients

  • 4 bone-in pork loin chops (8 ounces each)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons canola oil
  • 2 cups ketchup
  • 1/2 cup packed brown sugar
  • 1 teaspoon liquid smoke, optional

Directions

  • 1. Sprinkle pork chops with garlic powder, salt and pepper. In a large skillet, brown chops in oil on both sides; drain.
  • 2. In a small bowl, combine the ketchup, brown sugar and liquid smoke if desired. Pour half of the sauce into a 3-qt. slow cooker. Top with pork chops and remaining sauce. Cover and cook on low for 4-5 hours or until meat is tender. Yield: 4 servings.

"Thought these were quite tasty. I try to watch my sodium so I did skip the salt and instead used a little Mrs. Dash. Didn't have liquid smoke but put about a tsp of smoked paprika and it was delicious."

"My mother used to make this and I never got her recipe before she passed. This recipe sounded like it so I tried it. So glad to finally find it. The only thing that I changed was that she always included an onion. So I sliced a white onion and browned with the chops. Delicious!"

"Shirleysurly-the sodium content is not very unreasonable. Also, the amounts of ketchup and brown sugar can be adjusted by anyone with a modicum of common sense and imagination. As with a majority of recipes, this one can provide a base recipe upon which you can build if so desired. A decent barbecue-type sauce, and the chops were tender. The brown sugar helps to "mellow" the acidity of the ketchup (even though it already has sugar)."

"I topped each pork chop with a 1/2 cup of the ketchup/brown sugar, put an onion slice on top and wrapped each chop individually in aluminum foil. Put them on the grill for about an hour. Moist and delicious. Family loved them."

"This was so delicious! I forgot to take the chops out of the freezer, so I just decided to try throwing them in partially frozen. It worked great - I didn't even brown them(cause they were too frozen!:{), just added the salt, pepper and garlic powder to the ketchup mixture to keep the flavours. They were in for pretty much exactly 4 hours on low - turned out perfect! Will definitely make them again!"
