  • 1/3 cup mayonnaise
  • 2 tablespoons peanut butter
  • 2 cups shredded carrots
  • 1/3 cup raisins

Nutritional Facts

1/2 cup: 241 calories, 19g fat (3g saturated fat), 7mg cholesterol, 158mg sodium, 17g carbohydrate (12g sugars, 3g fiber), 3g protein.


  1. In a bowl, combine the mayonnaise and peanut butter. Stir in carrots and raisins. Cover and refrigerate until serving. Yield: 3-4 servings.

"I remembered this salad from my mother making it many years ago (actually remembered it in a dream!). This is the first I've seen it in print, although I never googled it before. My mother also added a small amount of chopped onion, which some may want to try."

"My family has made this for generations and it is always welcomed!! I've NEVER seen it anyplace else. All shredded carrot salads always seem to have pineapple or at least pineapple juice and no peanut butter. I made this for a salad with a dinner, when I was first married. A few days later, we had dinner with one of my cousin's families. My cousin asked my new husband how married life was treating him. He said, "GREAT--but she made this awful salad the other night with shredded carrots, raisins and peanut butter." My cousin then told him it was his favorite salad! Well, 44 years later, he loves it and requests it, often! LOL

"My husband and I loved this recipe at lunch today. I added three stalk parts of broccoli (chopped) and used the amounts for the other ingredients. It was sooo good and I'll be making it often."

"This is delicious!!! My husband and I enjoyed this for lunch today. I added three diced stalks (only the stalk part) of broccoli and the same amount of the other ingredients. Will be taking this to pot lucks, also. I couldn't imagine it being sooo good before tasting it."
