Ingredients

  • 2 cups spring mix salad greens
  • 1/4 cup crumbled goat cheese
  • 2 slices red onion, separated into rings
  • DRESSING:
  • 4 teaspoons honey
  • 1 tablespoon finely chopped shallot
  • 1 tablespoon cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 2 teaspoons lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

1 cup equals 169 calories, 10 g fat (3 g saturated fat), 18 mg cholesterol, 264 mg sodium, 18 g carbohydrate, 2 g fiber, 4 g protein.

Directions

  1. In a serving bowl, combine the salad greens, cheese and onion. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Yield: 2 servings.
