Roasted Red Potatoes Recipe

"These tender, tasty potatoes are so simple to make," confirms Kitty Hernandez of Chicago, Illinois. "There's no need to peel them - just slice, season and bake."
TOTAL TIME: Prep: 5 min. Bake: 40 min. YIELD:4 servings


  • 1 pound small red potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese


  • 1. Cut the potatoes into 1/4-in.-thick slices; toss with oil. Place in a single layer in a greased 13-in. x 9-in. baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350° for 40 minutes or until tender. Yield: 4 servings.
