Roast Beef Pasta Skillet Recipe

Ingredients

  • 1 cup uncooked spiral pasta
  • 1/2 cup chopped onion
  • 1 teaspoon olive oil
  • 1 teaspoon butter
  • 1 cup cubed cooked roast beef
  • 1 teaspoon pepper
  • 1/2 cup chopped tomato
  • 1/2 cup grated Parmesan cheese

Directions

  • 1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute onion in oil and butter until tender. Add roast beef and pepper; heat through. Drain pasta; add to beef mixture. Stir in tomato and cheese. Yield: 2 servings.

"Recipe was easy--my husband said it is a keeper and he doesn't like to try new things. I didn't have fresh tomatoes, so put some unsalted canned chopped tomatoes with some juice. Worked well also."

"The only thing I added was about 1/4 cup of fresh shredded basil, and we just sprinkled the cheese on individual servings. My whole family loved this, and with whole wheat pasta it is very healthy!"
