I'm one of those people who need chocolate on a regular basis. I looked high and low for a rich brownie recipe that called for cocoa instead of chocolate squares...and this is it. Ingredients

  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup butter, melted
  • 1/2 cup King Arthur Unbleached All-Purpose Flour
  • 1/3 cup baking cocoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • FROSTING:
  • 3 tablespoons baking cocoa
  • 3 tablespoons butter, melted
  • 2 tablespoons warm water
  • 1 teaspoon instant coffee granules
  • 1-1/2 cups confectioners' sugar

1 serving (1 each) equals 257 calories, 12 g fat (7 g saturated fat), 64 mg cholesterol, 174 mg sodium, 38 g carbohydrate, 1 g fiber, 2 g protein.

Directions

  1. In a large bowl, beat the sugar, eggs and vanilla. Beat in butter. Combine the flour, cocoa, baking powder and salt; gradually add to batter and mix well.
  2. Pour into a greased 8-in. square baking dish. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  3. For frosting, combine the cocoa and butter. Combine the water and coffee granules; add to cocoa mixture. Stir in sugar until smooth. Frost brownies. Yield: 12 servings.

Looked for a good brownie recipe and came across this one. After reading the reviews, I decided to try it. It was pretty easy to make (which is saying a lot for me because I can hardly stand to clean and cook) and tasted even better! I absolutely LOVE these brownies and so does my husband (who doesn't eat a lot of sweets because they hurt his teeth)!! I already bookmarked this page and WILL DEFINITELY make these again and again and again!!! SO SCRUMPTIOUS!!

I made the recipe as it was written except for the coffee in the frosting and my boys and I all really enjoyed it. It will be a keeper as brownies are very popular at our house!

Dense and good brownie - I only baked for the 25 min and they turned out chewy. I served mine "a la mode" with ice cream, no frosting, a homemade chocolate sauce also from TOH, and "wet" (glazed) walnuts

I took this recipe and multiplied it by 4. It filled a half sheet pan, baked perfectly, was fudgey, AND is simple enough that I would make it again.

I made a few additions to the recipe - I added one shot of espresso to the brownie as well as some more vanilla.

I haven't made the icing yet and I don't know if I will. These brownies are nice without it.
