Red Beans and Sausage Recipe

Turkey sausage, beans and a zesty blend of spices make this a deliciously unique meal.—Cathy Webster, Morris, Illinois
TOTAL TIME: Prep/Total Time: 20 min. YIELD:6 servings


  • 1 medium green pepper, diced
  • 1 medium onion, chopped
  • 1 tablespoon canola oil
  • 2 garlic cloves, minced
  • 2 cans (16 ounces each) kidney beans, rinsed and drained
  • 1/2 pound smoked turkey sausage, sliced
  • 3/4 cup water
  • 1 teaspoon Cajun seasoning
  • 1/8 teaspoon hot pepper sauce
  • Hot cooked rice, optional


  • 1. In a large saucepan, saute green pepper and onion in oil until tender. Add garlic; cook 1 minute longer.
  • 2. Add the next five ingredients and bring to a boil. Reduce heat; cook for 5-7 minutes or until sausage is heated through. Serve with rice if desired. Yield: 6 servings.
