Ingredients

  • 1/2 cup fresh or frozen raspberries, thawed
  • 1/3 cup sugar
  • 2-1/2 cups club soda, chilled
  • 1/4 cup lemon juice
  • Ice cubes
  • 2 lemon slices

Nutritional Facts

1-1/2 cup: 148 calories, 0g fat (0g saturated fat), 0mg cholesterol, 66mg sodium, 39g carbohydrate (36g sugars, 0g fiber), 0g protein .

Directions

  1. Place raspberries and sugar in a food processor; cover and process until pureed. Strain; reserving juice and discarding seeds.
  2. In a small pitcher, combine the club soda, lemon juice and raspberry juice. Serve in tall glasses over ice. Garnish with lemon slices. Yield: 2 servings.

"I honestly thought this would be a little 'bland' but it was NOT. There was a nice hint of raspberry and I loved the tart taste. I added just a bit less sugar and it was perfect. Plus, the club soda gives it that 'pop' fizz without all the junk! The kids LOVED it."
