Raisin Bran Muffins Recipe
- 1 package (15 ounces) raisin bran cereal
- 5 cups all-purpose flour
- 3 cups sugar
- 5 teaspoons baking soda
- 2 teaspoons salt
- 4 eggs, beaten
- 4 cups buttermilk
- 1 cup vegetable oil
- 1. In a large bowl, combine the raisin bran, flour, sugar, baking soda and salt. Combine the eggs, buttermilk and oil. Stir into dry ingredients just until moistened.
- 2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 12-16 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 3-1/2 dozen.

"I tried this recipe today and was disappointed. The muffins did not rise, just spread out. They got too dark before they got done. I used fresh ingredients (baking soda and buttermilk) and followed the directions. I have been baking for more than 50 years so I don't believe experience is the issue. Any suggestions?"
"This recipe was okay on it's own, but I felt like it needed more flavor. I added a few shakes of cinnamon, a pinch of cloves, a 1/2 tsp. vanilla and a splash of orange juice to the batter.I halved the recipe and still got about 36 normal-size muffins. There is much room for flavor additions."
