R.I.P. (Rest In Pizza) Recipe

Ingredients

  • 1 package (1/4 ounce) active dry yeast
  • 1-2/3 cups warm water (110° to 115°)
  • 2 tablespoons sugar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 2 cups all-purpose flour
  • 2 to 2-1/2 cups whole wheat flour
  • HEART-Y BLOOD SAUCE:
  • 1 can (8 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 3/4 cup water
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon finely shredded carrot
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 tablespoon minced fresh basil or 1 teaspoon dried basil
  • 1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • TOPPINGS:
  • 1 large green pepper, finely chopped
  • 1 small sweet red pepper, finely chopped
  • 1/4 cup finely chopped red onion
  • 1 cup finely chopped fresh pineapple
  • 1 cup finely chopped fully cooked ham
  • 1/2 cup grated Romano cheese
  • 1/4 cup shredded Italian cheese blend

Directions

  • 1. In a large bowl, dissolve yeast in warm water. Add the sugar, oil, salt, lemon juice and all-purpose flour. Beat until smooth. Stir in enough whole wheat flour to form a soft dough.
  • 2. Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and rest for 10 minutes.
  • 3. Meanwhile, in a small saucepan, combine the sauce ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until slightly thickened, stirring occasionally.
  • 4. Roll dough into a 15-in. circle. Transfer to an ungreased 14-in. pizza pan, building up edges slightly. Do not let rise. Bake at 425° for 12-15 minutes or until lightly browned.
  • 5. Spread sauce over crust. Top with peppers, onion, pineapple, ham and cheeses. Bake for 8-10 minutes or until cheese is melted and edges are golden brown. Yield: 12 slices.
