Quick Marinated Mushrooms Recipe

This recipe came to me from a dear friend. I use these flavorful mushrooms as a side dish or to garnish an entree. They're always a big hit at potlucks. —Sylvia Raynor, Corvalis, Oregon
TOTAL TIME: Prep: 10 min. + marinating YIELD:2 servings

Ingredients

  • 1/3 cup water
  • 1/4 cup cider vinegar
  • 2 tablespoons vegetable oil
  • 2 tablespoons olive oil
  • 2 garlic cloves, peeled and cut into wedges
  • 1 bay leaf
  • 4 teaspoons minced fresh parsley
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1/8 to 1/4 teaspoon salt
  • 1/2 pound fresh mushrooms

Directions

  • 1. In a bowl, combine the water, vinegar, oils, garlic, bay leaf, parsley and seasonings. Add mushrooms; toss to coat. Cover and refrigerate for at least 6 hours. Discard bay leaf. Serve with a slotted spoon. Yield: 2 servings.
