Ingredients

  • 2 medium carrots, sliced
  • 2 celery ribs, chopped
  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 2 cups cubed fully cooked ham
  • 1 teaspoon chili powder
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon pepper
  • 1 bay leaf

Nutritional Facts

1 cup: 168 calories, 7g fat (3g saturated fat), 30mg cholesterol, 1242mg sodium, 14g carbohydrate (3g sugars, 4g fiber), 12g protein .

Directions

  1. In a large saucepan, saute the carrots, celery and onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cook for 15 minutes or until heated through. Discard bay leaf. Yield: 7 servings.

"I used the beans I had on hand. 2 navy beans, 1 northern and 1 pinto. I add more ham than what the recipe called for and added some sweet peppers to the veggies. I also took the advise of the others and added bacon to the pot and put the kale 10 min before serving. So good! While the beans and such were cooking up, I mashed up some beans in the pot to thicken it up a bit! Definitely a keeper :)"

"Sauteed veggies until slightly tender. Put into crock pot with other ingredients. Added a fatty chunk of ham and 6 slices of raw bacon cut into 3 inch slices to add additional flavor. Set on high setting for about an hour or so then turned to low and let cook for several hours. It was delicious straight out of the crock pot, but was even better the next day! Highly recommend this easy receipe! It's fool proof!"

"I put my leftover ham bone in the crock pot with the chicken stock, then added the carrots celery, and onion and the spices after I sauteed them. After slow simmering everything else I added the canned beans. When I served the soup, I topped it with green onions and bacon bits. Everyone came back for more! Happy Smiles all around."

"Quick , easy and inexpensive. I had a left over ham shank and put that in a separate pot with some seasoning in case it needed more flavor but my family loved it just the way it was. Very pleased!"

"We enjoyed this even more when I pureed one can of the beans with some of the chicken broth in a food processor and added for a thicker texture. I also used lower sodium chicken broth."
