Quick Creamy Cucumber Salad Recipe
- 9 cups thinly sliced peeled cucumbers
- 8 green onions, thinly sliced
- 1/4 teaspoon onion salt
- 1/4 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1 cup mayonnaise
- 1/4 cup sugar
- 1/4 cup evaporated milk
- 1/4 cup cider vinegar
- 2 drops hot pepper sauce
- 1. In a large bowl, combine the first five ingredients. In a small bowl, combine the remaining ingredients; pour over cucumber mixture and toss to coat. Cover and refrigerate for at least 4 hours. Yield: 12 servings.
3/4 cup: 180 calories, 15g fat (2g saturated fat), 8mg cholesterol, 183mg sodium, 9g carbohydrate (8g sugars, 2g fiber), 2g protein.

"I lost my BIG taste of home cookbook which had the original creamy cucumber salad recipe in it. I don't recall that recipe having hot sauce or garlic salt in it. Can ya'll tell me if this one is as good as that one. The particular recipe I have lost is daddy's favorite and this year at Thanksgiving may be his last as he was recently diagnosed with a large brain tumor and I want desparately to make sure he likes his cucumber salad. sherri"
