These fast-to-prepare waffles are perfect to whip up at the last minute, and the recipe can easily be doubled. I often made them when our six children were growing up. And now when they come back to visit, they always request them.

  • 2 cups biscuit/baking mix
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 7 ounces lemon-lime soda

Nutritional Facts

1 each: 542 calories, 39g fat (7g saturated fat), 106mg cholesterol, 793mg sodium, 42g carbohydrate (6g sugars, 1g fiber), 7g protein.


  1. In a bowl, combine the baking mix, eggs and oil. Add soda and mix well. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Yield: 4-5 waffles.

"Thank you for submitting this recipe! I made it the next morning. It was so easy for me to remember how to make! The waffles got RAVE reviews from my teens and husband. The texture is light and subtly crunchy. They just melt in your mouth.... This is my new " keeper" waffle recipe."
