Quick Ambrosia Fruit Salad Recipe

I start this with plenty of fruit, add the yogurt for dressing, then mix in just enough marshmallows and coconut so it tastes like the fresh and creamy version I grew up with. It’s a well-loved recipe in my home now. —Trisha Kruse, Eagle, Idaho
TOTAL TIME: Prep/Total Time: 10 min. YIELD:6 servings

Ingredients

  • 1 can (8-1/4 ounces) fruit cocktail, drained
  • 1 can (8 ounces) unsweetened pineapple chunks, drained
  • 1 cup green grapes
  • 1 cup seedless red grapes
  • 1 cup miniature marshmallows
  • 1 medium banana, sliced
  • 3/4 cup vanilla yogurt
  • 1/2 cup flaked coconut

Directions

  • 1. In a large bowl, combine all ingredients. Chill until serving. Yield: 6 servings.

"I prepared this for dinner tonight and it was very good. Nothing fancy, just a refreshing fruit salad. It took minutes to prepare and popped it in the fridge for about an hour. It was delicious and perfect for a last minute salad. We will have this again. I highly recommend this recipe as a Volunteer Field Editor."

"Delicious! I made it withut coconut cuz my kids won't eat it, but next time I am going to divide it in two and make on with and one without. I don't like fruit cocktail, so I used chopped cantalope and watermelon instead. I will add strawberries, too, next time. A big hit!"

"LOVE IT!!! I had to make a few modifications due to ingredients available (the store didn't have a single red grape or banana). I added the mandarin oranges per the comments below and because I already had them in the pantry. Since I personally don't like fresh coconut, I toasted the flakes first. Also, here's a TIP: make it the night before and let it refrigerate overnight. This makes a world of difference, as the marshmallows soften and become moist as they absorb the juices. I made this as part of our family's Christmas dinner and everyone loved it! Thanks for a great healthy and delicious recipe! I'll definitely be making this on the reg."
