DEAR KAREN: When a recipe calls for toasted nuts or coconut, how do I toast them?

Spread nuts or shredded coconut in a single layer on a baking pan with sides and bake at 350° until light golden brown, stirring often. Timing will depend on how finely the ingredients are chopped and how much is in the pan. They will generally toast in 5-10 minutes, but keep a close watch to prevent burning, especially with coconut.

Another way to toast nuts and coconut is in a skillet on the stove. This works great when you only need a small amount. With the skillet over medium-high heat, stir or shake the nuts or coconut frequently for 5 to 7 minutes or until they start to turn golden brown. Remove them from the skillet as soon as they're done.
