  • 2 large eggs
  • 1/4 cup matzo meal
  • 2 teaspoons kosher salt
  • Dash pepper
  • 6 large potatoes (about 4-3/4 pounds), peeled
  • 1 large onion, cut into 6 wedges
  • 1/4 cup canola oil

1 serving: 210 calories, 6g fat (1g saturated fat), 35mg cholesterol, 515mg sodium, 36g carbohydrate (3g sugars, 3g fiber), 5g protein.


  1. Preheat oven to 375°. In a large bowl, whisk eggs, matzo meal, salt and pepper.
  2. In a food processor fitted with the grating attachment, alternately grate potatoes and onion. Add to egg mixture; toss to coat. In a small saucepan, heat oil over medium heat until warmed. Stir into potato mixture. Transfer to a greased 13x9-in. baking dish. Bake 40-50 minutes or until golden brown. Yield: 12 servings.

"I followed recipe ingredients as given. Only ingredient change was adding 1 Tbsp. butter to baked kugel and putting under broiler for about 5 minutes for MORE color. I'd baked the kugel @ 350o F. by mistake!

I did sample kugel and with the broiled top, I did get more color! The kugel tasted like a giant baked potato latke and was crunchy on top!"
