- 1 tablespoon butter
- 2 cups cubed peeled potatoes
- 5 ounces SPAM luncheon meat, finely chopped
- 3/4 cup 2% milk
- 1 small onion, chopped
- 1 tablespoon minced fresh parsley
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- In a large skillet, melt butter over medium-high heat. Stir in the remaining ingredients. Cook and stir for 10-12 minutes or until browned and potatoes are tender. Yield: 2 servings.
