Pineapple Smoothie Recipe
- 1 can (20 ounces) unsweetened pineapple chunks, undrained
- 1 cup buttermilk
- 2 teaspoons vanilla extract
- 2 teaspoons sugar substitute
- Mint leaves, optional
- 1. Drain pineapple, reserving 1/2 cup juice. Freeze pineapple chunks. Place the juice, buttermilk, vanilla, sugar substitute and frozen pineapple in a blender; cover and process until smooth. Pour into glasses and garnish with mint if desired. Serve immediately. Yield: 5 servings.
3/4 cup: 80 calories, 0 fat (0 saturated fat), 2mg cholesterol, 61mg sodium, 17g carbohydrate (14g sugars, 1g fiber), 2g protein. Diabetic Exchanges: 1/2 fruit, 1/2 fat-free milk.
