Pineapple Slaw Recipe
- 2 cups coleslaw mix
- 1 cup unsweetened crushed pineapple, drained
- 1/3 cup shredded carrot
- 3 medium radishes, shredded
- 1/4 teaspoon celery seed
- 1/3 cup mayonnaise
- 1. In a large bowl, combine the first five ingredients. Add mayonnaise and toss to coat. Cover and refrigerate until serving. Yield: 4 servings.
3/4 cup (prepared with fat-free mayonnaise) equals 66 calories, 1 g fat (trace saturated fat), 2 mg cholesterol, 173 mg sodium, 15 g carbohydrate, 2 g fiber, 1 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fruit.
