Pineapple Slaw Recipe
- 2 cups coleslaw mix
- 1 cup unsweetened crushed pineapple, drained
- 1/3 cup shredded carrot
- 3 medium radishes, shredded
- 1/4 teaspoon celery seed
- 1/3 cup reduced-fat mayonnaise
- 1. In a large bowl, combine the first five ingredients. Add mayonnaise and toss to coat. Cover and refrigerate until serving. Yield: 4 servings.
3/4 cup equals 116 calories, 7 g fat (1 g saturated fat), 7 mg cholesterol, 142 mg sodium, 14 g carbohydrate, 2 g fiber, 1 g protein. Diabetic Exchanges: 1-1/2 fat, 1 vegetable, 1/2 fruit.
