Pierogi Beef Skillet Recipe

Hearty and thick with beef, veggies and potatoes, this is a complete meal in one. Taste of Home Test Kitchen - Greendale, Wisconsin
TOTAL TIME: Prep/Total Time: 30 min. YIELD:4 servings

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1 can (14-1/2 ounces) beef broth
  • 1 package (16 ounces) frozen cheese and potato pierogies, thawed
  • 2 cups frozen mixed vegetables, thawed and drained
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup shredded cheddar cheese

Directions

  • 1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain, reserving 3 tablespoons drippings.
  • 2. Sprinkle flour over beef and drippings; stir until blended. Gradually add beef broth. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • 3. Stir in the pierogies, vegetables and seasonings. Cook, uncovered, for 4-5 minutes or until heated through. Sprinkle with cheese. Yield: 4 servings.

"I really liked this recipe. It's super easy and fast. The only thing I had a problem with was the timing after the perogies are added. In order to be heated through I needed to leave it on for at least 10-15 minutes. I added the perogies to the skillet and covered them with the meat sauce to get them cooked better. I used 3/4 cup of peas and carrots mixed and 3/4 cup of corn. This was the right amount for us. I think next time I will use 16 oz of beef stock just so it is a bit wetter to cook the perogies better. Thanks for this one."

"This is really a good meal that is quick to make after coming home from a long work day. I didn't have mixed veggies on hand so just used frozen peas and also added some fresh mushrooms. I feel I should not give a 5 star rating since I didn't make the recipe as written but I would give it a 5 star with my changes. I will make again and use ingredients I have on hand..or follow the recipe as written. Can't go wrong either way! Very good the next day as well!!"

"I really enjoyed this dinner. I grew up on pierogis and we use to just put butter on them. I like finding recipes that use other things to top the pieorgis. This was comfort food for me! I don't think I would change a thing on the recipes. Will be making this again, it was very easy!"

"Rating this recipe *4* stars, since will need to make adjustment. Have no beef broth in pantry (used up last can Friday), so will sub. chicken broth. Do you think chicken would make a significant difference in taste? I'm sure hoping it doesn't. Have no instant in to nmake broth, either."

"I used 3/4 lb of ground serlion for a meatier taste at the same price...2 cups of beef broth (Organic Better Than Boullion - a mainstay in my kitchen now!)...substituted brown rice flour for the thickener and went with potato-onion pierogis...omitted the cheese altogether. It came out great! Simple and, yes, delicious."
