Pesto Grilled Salmon Recipe
- 1 salmon fillet (3 pounds)
- 1/2 cup prepared pesto
- 2 green onions, finely chopped
- 1/4 cup lemon juice
- 2 garlic cloves, minced
- 1. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5 minutes.
- 2. In a small bowl, combine the pesto, onions, lemon juice and garlic. Carefully spoon some of the pesto mixture over salmon. Grill 15-20 minutes longer or until fish flakes easily with a fork, basting occasionally with remaining pesto mixture. Yield: 12 servings.
