Peppery Cheddar Muffins

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 Eggland's Best Egg
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 tablespoon honey
- 1 cup (4 ounces) shredded cheddar cheese
- In a bowl, combine the flour, baking powder, pepper and salt.
- Combine the egg, buttermilk, oil and honey; stir into dry
- ingredients just until moistened. Fold in cheese. Fill greased or
- paper-lined muffin cups two-thirds full. Bake at 400° for 18-22
- minutes or until muffins test done. Cool for 5 minutes before
- removing from pan to a wire rack. Yield: 1 dozen.
