Ingredients

  • 2 teaspoons plus 1 tablespoon butter, divided
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 cup pecan halves
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

1 ounce-weight: 136 calories, 6g fat (1g saturated fat), 2mg cholesterol, 90mg sodium, 21g carbohydrate (16g sugars, 1g fiber), 1g protein

Directions

  1. Grease a 15-in. x 10-in. x 1-in. pan with 2 teaspoons butter; set aside.
  2. In a 2-qt. microwave-safe glass dish, combine sugar and corn syrup. Microwave, uncovered, on high for 4 minutes or until a candy thermometer reads 238° (soft-ball stage).
  3. Add pecans. Microwave for 4 minutes or until a candy thermometer reads 300° (hard-crack stage). Mixture will be very hot. Vigorously stir in the baking soda, vanilla and remaining butter until blended.
  4. Quickly pour into prepared pan; spread with a metal spatula as thin as possible. Cool completely; break into pieces. Store in an airtight container with waxed paper between layers. Yield: about 1 pound.
Editor’s Note: This recipe was tested in a 1,100-watt microwave. We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°. Adjust your recipe temperature up or down based on your test.

"Tastes are individual. I will qualify my review that my review is based on a taste preference. I did not care for this recipe. Again, this is a taste preference. I prefer a more 'buttery' experience with nut brittles and a little more crunch. I believed this recipe to be somewhat (not grossly) lacking in depth of flavor and in 'crunch'. Having said that...instructions were clear, and it produces a satisfactory product. However, it is not on par (to my tastes) with other recipes that I have used. It is certainly worth making to determine if it satisfies YOUR tastes. I thank the submitter of this recipe for taking time to share."

"Worked great! My microwave is supposed to be 1350 watts, but still took 4:00 plus 1:30 more to get it to temperature on the first step. But 4:00 minutes worked great on the second heat. Don't know how anyone could have "burned" it as one review said. Perhaps they have a huge old 2000 watt or higher microwave. I'd recommend try it again and heat in 2 minute increments until you get to temperature. Also I think the ratio of nuts to candy is a little high. I think next time I'll double the candy, but only increase the nuts by a third or so. Finally found another good use for the microwave besides leftovers."

"This was horrible and I've made brittle for 20 yrs. I followed the recipe to a "T" and burnt everything...I even used a candy thermometer."

"This was wonderful!! And sooo easy. My microwave is a 1,650 watt microwave so I adjusted both cooktimes to be 3 minutes rather than 4. Thank you for including the candy temperatures - that helped me to be confident on the times. It was so good and so easy, I am going to make another batch tomorrow."
