  • 2 cups (16 ounces) 2% cottage cheese
  • 2 medium pears, chopped
  • 2 celery ribs, chopped
  • 1/3 cup chopped pecans
  • 1/2 teaspoon ground ginger

Nutritional Facts

2/3 cup: 135 calories, 6g fat (1g saturated fat), 9mg cholesterol, 255mg sodium, 14g carbohydrate (8g sugars, 3g fiber), 8g protein. Diabetic Exchanges: 1 lean meat, 1 fat, 1/2 fruit.


  1. In a large bowl, combine all ingredients. Chill until serving. Yield: 6 servings.

"I modified this salad by eliminating the ginger and celery. I added a pinch of brown sugar and cinnamon instead. You could also use toasted sweetened pecans instead of the brown sugar/cinnamon combo."
