- 1 large egg, beaten
- 1 cup sugar
- 1 cup creamy peanut butter
- In a large bowl, mix all ingredients. Scoop level tablespoonfuls and roll into balls. Place on ungreased baking sheets and flatten with a fork.
- Bake at 350° for about 18 minutes or until set. Remove to wire racks to cool. Yield: 2 dozen.

"These were so simple and tasted great. My family would prefer them a little less sweet so I will cut down on the sugar next time and definitely only bake 8-10 min. and not the full 18 min. As others suggested we too prefer the traditional peanut butter cookies made with flour, but these are wonderful when time is short."
"Just okay - I love how easily these go together but the dough is really greasy feeling due to the peanut butter and they basically spread out to a very thin cookie while baking -- yes they are tasty and were a hit but in no way did they look like the picture. I even tried chilling part of the dough so that they wouldn't spread so much but it didn't help. I baked them on parchment paper too."

"I have been making this recipe for years and I LOVE it! I have never had a problem with them crumbling so it must make a difference with the pan you bake on. I only bake them on stoneware and have never had a problem. They come out soft and will stay soft by putting in an air tight container. Everyone always asks for this recipe when I share them and can't believe how simple they are to make. My only change is the baking time to 13 min. Yummy!"
