Peanut Butter Blondie Bars Recipe

TOTAL TIME: Prep: 10 min. Bake: 25 min. + cooling YIELD:16 servings

Ingredients

  • 2 large eggs
  • 3/4 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup butter, melted and cooled
  • 3 tablespoons 2% milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 4 peanut butter cups, chopped

Directions

  • 1. In a large bowl, beat eggs and brown sugar for 3 minutes. Add the peanut butter, butter and milk; mix well. Combine the flour, baking powder and salt; gradually add to sugar mixture, beating just until blended. Stir in the peanut butter cups.
  • 2. Spread into a greased 9-in. square baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars. Yield: 16 servings.

"I should've read the reviews before I made these! I was going to write a review that these bars took much longer to bake and that they were much more like cake than a blondie but looks like others beat me to it! Because they took longer to bake the edges and bottom got way too dark and ruined the flavor. I was really disappointed in how they turned out."

"Due to some comments here, we retested this recipe again. While we agree they were a bit thick and cake-like, the flavor was very good. We have revised the recipe to bake in a 9-in square pan to spread the batter out a bit more. Also, we increased the bake time to 25-30 minutes.

For anyone that likes moist, fudgy bars and peanut butter, these are for them.

"These had good flavor, but were nothing like the picture. I made a double recipe, baked it in a 9x13 pan, and it took a lot longer to be done in the middle. They were very cake-like, and not gooey at all. Next time I will just add some peanut butter to my own blonde brownie recipe."

"These were very cakey, not like the picture at all. They tasted pretty good, though, so I'd probably try them again in a bigger pan to see if they were more similar to the picture. I followed the recipe exactly, but it also took way longer to get done than it says in the 8x8 pan - nearly 35 min!"

"This is so good and simple to make. For an extra treat I put chocolate chips on the top before I baked them. If you love peanut butter, this is the treat for you. Awesome!"
