Pancakes for One Recipe

Ann Schenk (at Left) of Winnett, Montana, has used the recipe for Pancakes for One for years. Originally it served six. "As our kids grew up and left home, I scaled down the recipe," Ann says. "Now if my husband, Mike, or I have a taste for these pancakes, it's easy to make just a few."
TOTAL TIME: Prep/Total Time: 15 min. YIELD:1 servings

Ingredients

  • 1/2 cup all-purpose flour
  • 2 teaspoons toasted wheat germ
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup buttermilk
  • 1-1/2 teaspoons vegetable oil
  • Butter and maple syrup

Directions

  • 1. In a bowl, combine flour, wheat germ, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk an oil. Stir into dry ingredients just until blended.
  • 2. Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup. Yield: 1 serving (3 pancakes).

"This is perfect! I made two recipes, which was more than enough, but they're delicious! I used all flour (w/o the wheat germ), I added a touch of ginger and nutmeg, and some sugar. (from reading a few other reviews) Definitely a keeper. Thank you!"

"Just like the larger batches I used to make for my family! I'm alone so don't have all ingredients on hand. I used 1/2 tbsp white vinegar in milk in place of buttermilk, crushed walnuts instead of wheat germ. Added 1 teaspoon of sugar. PERFECTION!"

"I didn't have buttermilk, so sub'd with sour milk (1/2 cup of milk with 1/2 teaspoon of lemon juice). Only used a pinch of salt. Made more than enough for one."

"on the hunt for pancake recipe for one,found this.It's promising. But due to I didn't want to run to the grocery store, I didn't have toasted wheat germ,so replaced w/flour.Didn't have buttermilk,just used whole milk.Used Coconut oil (my latest fav) & always put vanilla in my batter. It was alil' heavier texture that I like but I will try it w/wheat germ & buttermilk for that may make a difference! Thanks for sharing your recipe, this empty nester is going through withdrawls on my carbs since my Girls are not here!"

"A perfect recipe for a single serving of pancakes. I made 2 large ones from this recipe and it was more than enough. The pancakes are easy to make and taste so good (I added chocolate chips!)"
