Ingredients

  • 2 medium potatoes
  • 1/4 cup butter, melted
  • 1 tablespoon finely chopped onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash paprika
  • 2 tablespoons grated Parmesan cheese

Nutritional Facts

1 cup equals 393 calories, 25 g fat (15 g saturated fat), 65 mg cholesterol, 876 mg sodium, 39 g carbohydrate, 5 g fiber, 6 g protein.

Directions

  1. Preheat oven to 425°. Cut potatoes into 1/4-in. slices; arrange in a single layer on two greased baking sheets. In a small bowl, mix butter, onion, salt, pepper and paprika; brush over both sides of potatoes.
  2. Roast 15-20 minutes or until potatoes are tender and golden, turning occasionally. Sprinkle with cheese. Yield: 2 servings.

"You don't need oil just spray cookie sheet,Place on and cover for 15 minutes then remove foil flip and cook 15 more minutes at 400 degrees. Less fat and individual salt at time of dining, healthier?"

"We enjoyed this take on potatoes, but the description gave me a good chuckle; "My husband and I avoid fried foods" with a recipe adding 1/8 cup of butter and 25g fat per serving. Still, butter makes this very tasty."
