- 2 medium potatoes
- 1/4 cup butter, melted
- 1 tablespoon finely chopped onion
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Dash paprika
- 2 tablespoons grated Parmesan cheese
- Preheat oven to 425°. Cut potatoes into 1/4-in. slices; arrange in a single layer on two greased baking sheets. In a small bowl, mix butter, onion, salt, pepper and paprika; brush over both sides of potatoes.
- Roast 15-20 minutes or until potatoes are tender and golden, turning occasionally. Sprinkle with cheese. Yield: 2 servings.

These were great. I doubled the recipe and left out the onion. My son, who's a toddler, Is very picky when it comes to vegetables but he loved these and wanted seconds of them!

This easy recipe is a keeper! The crispy potatoes are an excellent side dish with burgers or grilled chicken. My husband normally does not eat french fries or potato chips, but he loved these at first bite!

I make this recipe often. However, I put the butter, onion, and spices in my food processor and then toss the potatoes in the mixure - faster than brushing!
