Orange Macadamia Nut Cookies Recipe

Ingredients

  • 1 cup butter, softened
  • 1 cup confectioners' sugar
  • 1 egg yolk
  • 2 tablespoons orange juice
  • 2 teaspoons grated orange peel
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup macadamia nuts or blanched almonds
  • FROSTING:
  • 1 cup confectioners' sugar
  • 4 teaspoons butter, softened
  • 1 tablespoon orange juice
  • 1/2 teaspoon grated orange peel

Directions

  • 1. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the egg yolk, orange juice and peel. Combine flour and cornstarch; add to creamed mixture and mix well. Stir in nuts.
  • 2. Roll into 1-1/4-in. balls; place 2 in. apart on ungreased baking sheets. Gently flatten with the bottom of a glass dipped in sugar. Bake at 350° for 12-15 minutes or until edges begin to brown. Remove to wire racks to cool completely.
  • 3. Combine frosting ingredients in a bowl; beat until smooth. Frost cookies. Yield: about 3-1/2 dozen.
