Ingredients

  • 1 cup butter, softened
  • 1 cup confectioners' sugar
  • 1 egg yolk
  • 2 tablespoons orange juice
  • 2 teaspoons grated orange peel
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup macadamia nuts or blanched almonds
  • FROSTING:
  • 1 cup confectioners' sugar
  • 4 teaspoons butter, softened
  • 1 tablespoon orange juice
  • 1/2 teaspoon grated orange peel

Directions

In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the egg yolk, orange juice and peel. Combine flour and cornstarch; add to creamed mixture and mix well. Stir in nuts.
Roll into 1-1/4-in. balls; place 2 in. apart on ungreased baking sheets. Gently flatten with the bottom of a glass dipped in sugar. Bake at 350° for 12-15 minutes or until edges begin to brown. Remove to wire racks to cool completely.
Combine frosting ingredients in a bowl; beat until smooth. Frost cookies. Yield: about 3-1/2 dozen.

"These cookies were very good. I would make them again! A bonus feature is it made the exact amount (3-1/2 doz) as stated in the recipe. Sometimes that doesn't work out as well."

"Have made this several times, the very best. Have also added some dried cranberries, came out very good. Big brother, who is not much of a cookie person, really liked them. A keeper"
